El Rubí
Wilder Lazo & Heiner Lasso, San Adolfo, Huila, Colombia
El Rubí is a coffee that feels vivid from the very first sip — expressive, layered, and beautifully refined. Produced by Wilder Lazo and Heiner Lasso in the highlands of Huila, this exceptional Chiroso lot showcases the elegance and complexity that have made the variety one of the most celebrated coffees coming out of Colombia today.
Processed as a washed coffee with an extended 100-hour anoxic wet fermentation, the cup carries remarkable clarity while developing intense aromatic depth and a striking tropical character. The result is a profile that feels both vibrant and polished, with every note unfolding seamlessly into the next.
Bright pineapple and ripe maracuyá lead the cup with a juicy sweetness, followed by delicate florals reminiscent of Darjeeling tea and soft baking spices that linger through the finish. As the coffee cools, its complexity becomes even more pronounced, revealing layers of sweetness and structure wrapped in a silky, smooth mouthfeel.
What makes El Rubí special is not only its intensity, but its balance. The fermentation elevates the coffee without overshadowing the character of the Chiroso variety itself — preserving its floral elegance, tea-like clarity, and refined acidity.
This is a coffee crafted with precision and intention; expressive enough to stand out, yet elegant enough to keep returning to.
